Tucked inside the Traube Tonbach hotel in a pine valley near Baiersbronn, Schwarzwaldstube — "Black Forest parlor" — has held three Michelin stars since 1992, the longest unbroken run of any restaurant in Germany. Chef Torsten Michel took the kitchen over in 2016 from the legendary Harald Wohlfahrt and hasn't let the standard slip, working classic French foundations through modern technique with the region's own ingredients. The dining room looks straight out over the valley through floor-to-gable glass, and the wine list and pairings are a destination in themselves. A kitchen fire forced a rebuild a few years back; the cooking never missed a beat. Three Michelin stars, and worth the drive into the forest.
