Cheval Blanc is the flagship restaurant of the Grand Hotel Les Trois Rois, a riverside Basel institution with more than three centuries of history behind it. Chef Peter Knogl has held three Michelin stars here for years with a style all his own: classic French haute cuisine lifted with Mediterranean warmth and quiet Asian accents, built around the product and, above all, the sauce. He's been dubbed the "king of sauces," and he means it — every plate arrives with a spoon so you don't leave a drop behind. Expect impeccable seafood, his celebrated Bresse pigeon, and a room of antiques, chandeliers and Rhine views to match. Among the handful of three-star tables in all of Switzerland, and one of the most consistent anywhere.
