In a former textile villa in the Dolomites, the fullest expression yet of "Cook the Mountain."

Chef Norbert Niederkofler spent decades developing a single idea — Cook the Mountain, the principle that only what the Alpine region actually produces belongs on the plate — and in 2023 he gave it a home in his hometown of Brunico, inside the nineteenth-century Villa Moessmer, once tied to a famous local wool mill. The discipline is real: no olive oil, no citrus, very little salt, with acidity coming from grapes and berries and preservation done by fermenting, drying and smoking. He renovated the protected building himself, kept its old floors and a fabric sample book on display, and within months had three Michelin stars and a Green Star; in 2025 it landed at number 20 on the World's 50 Best. Each morning the team heads out to see what the mountains will give that day, and you eat the answer from a counter facing the open kitchen. Few restaurants taste this much like the ground they stand on.
