A century-old Burgundy institution in a 15th-century coaching inn — and the only three-Michelin-star table in the region.

The Lameloise family took over a coaching inn in the small Burgundy town of Chagny in 1921, and across three generations — Pierre, Jean and Jacques — built it into one of France's most enduring restaurants, winning the third Michelin star in 1979. When Jacques retired in 2009, he handed the kitchen not to a relative but to Éric Pras, a Meilleur Ouvrier de France who'd trained under Troisgros, Bernard Loiseau and Pierre Gagnaire — and Pras has held all three stars ever since, a rare case of buying into a three-star house without the level slipping. His cooking is a faithful, living tribute to Burgundian terroir — snails, Bresse poultry, Charolais beef, Morvan hazelnut — refined with contemporary precision and the odd jaunt to the seaside.
