The country estate where Michel Guérard, a founding father of nouvelle cuisine, held three Michelin stars for nearly half a century.

Michel Guérard — one of the inventors of nouvelle cuisine and the man who put cuisine minceur on the cover of Time — opened Les Prés d'Eugénie with his wife Christine in 1974, in a small spa village in the Landes, and held three Michelin stars there from 1977 until his death in August 2024. Remarkably, the kitchen kept all three the following year: the restaurant is now guided by his daughters Éléonore and Adeline, with head chef Hugo Souchet, who trained alongside Guérard for years preparing exactly this succession. The cooking carries his DNA forward — naturalist, light-handed, precise, marrying diverse flavours with the touch of a conductor. The estate itself is a Relais & Châteaux palace of eight hectares, with several historic buildings, a thermal spa and seven poetic gardens. A meal here is a pilgrimage into French culinary history, served in the lush Gascon countryside.
