A 26-year-old took over an empty Swiss castle in 2003 — two decades on, it's one of the Alps' great tables.

Chef Andreas Caminada cooks inside an honest-to-goodness castle at the foot of Piz Beverin, and there are eleven rooms upstairs if you want to make a real night of it. He builds the menu almost entirely out of Graubünden — a lot of it from the restaurant's own garden — instead of reaching for the usual luxury suspects, so the food tastes like the place you're sitting in. It's wood-clad and warm, big on foraging, and even the no-and-low pairing is something they clearly sweated over. Three Michelin stars and a steady spot on the World's 50 Best. Remote, yes — that's rather the point.
