Self-taught Chef Ana Roš put Slovenia on the world's culinary map — and her remote Soča Valley restaurant became the country's first to hold three Michelin stars.

Chef Ana Roš never trained in a professional kitchen; she was a competitive skier and a diplomacy student before she taught herself to cook at Hiša Franko, the family guesthouse in the green Soča Valley near the Italian border. Her food is the valley itself — wild herbs, mountain dairy, river trout, game and berries gathered nearby — and through a Netflix Chef's Table episode and a World's Best Female Chef title she more or less single-handedly drew the world to a Slovenian village of barely a thousand people. Cult dishes like the corn beignet with fermented cheese and the potato baked in a crust of summer hay anchor a long, personal tasting menu, poured alongside natural Slovenian wines. In 2023 it became the first restaurant in Slovenia to earn three Michelin stars. Remote, warm, and worth every hour of the drive in.
