In a city where fine dining tends toward reverent hush, Gion Sasaki is a happy rebel. Chef Hiroshi Sasaki turned his open kitchen into what regulars call the "Sasaki Theatre": he leans across the counter to explain a dish, pour a sake, or spin a story, and the room hums with an energy you don't expect from three-star kaiseki. Don't mistake the warmth for looseness — the cooking is seriously good, modern kaiseki rooted in Kyoto tradition but unafraid to surprise, right down to the brick oven behind the counter. His influence runs deep, too: a whole lineage of his former apprentices now run acclaimed restaurants of their own across the city. Book far ahead, and sit at the counter. Half the show is the chef.
