Why we point you here

Refined, sustainable British cooking in Notting Hill — the first restaurant from a British woman to hold three Michelin stars.

Chef Clare Smyth spent years as chef patron at Restaurant Gordon Ramsay, where she became the first woman to run a three-Michelin-star kitchen in the UK, before opening Core in a Notting Hill townhouse in 2017. It took two Michelin stars almost immediately and a third in 2021, making her the first British woman to hold three at her own restaurant. Her cooking is deeply, proudly British — top produce from dedicated UK farmers, turned into dishes meant to spark memory and emotion. The signatures say it best: "Potato and Roe," a single potato in dulse beurre blanc that's pure quiet brilliance, and a dessert built to taste like a Malteser. Start with a drink in the Whiskey & Seaweed bar. Polished, warm, and never stuffy.
