Push through a curtain in Colonia Juárez and Handshake looks like a 1920s speakeasy but runs like a science lab. Everything gets clarified and prepped for days, so the piña colada arrives clear as water and bracing instead of thick and sweet, and the fig martini that first made their name is way more work than it has any right to be. Some of these drinks take two days before they hit your glass, which is a little unhinged, and then you taste one and get it. Handshake has topped the World's 50 Best Bars, the first Mexican bar ever to pull that off, and it keeps landing Best Bar in North America. If the main room's packed, the izakaya downstairs runs the same trick.
