Kashiwaya takes its name from a ryokan inn once run by Hideaki Matsuo's ancestors, and his cooking carries that lineage forward: traditional kaiseki shaped by the etiquette and aesthetics of the Kyoto tea ceremony, served across seven tatami private rooms in sukiya style. The menu runs to eight dishes that change every month — grilled amadai tilefish marinated in fermented shrimp is a signature — and ingredients are bought and prepped against your exact reservation time for maximum freshness. It's an unusual spot for a three-star: a calm residential corner of Suita rather than Kyoto or central Osaka, which suits the unpretentious local food culture it grew from. Three Michelin stars since 2010, a Green Star, and a 2026 Mentor Chef Award for Matsuo's work training the next generation.
