Norway's only three-Michelin-star restaurant, where a Danish chef cooks the Norwegian landscape from organic, biodynamic and wild produce alone.
Maaemo — from a Finnish word for "Mother Earth" — opened in a then-rough Oslo neighbourhood in 2010, and by 2012 had become the first Nordic restaurant to debut straight into the Michelin guide at two stars. Danish chef and co-founder Esben Holmboe Bang took the third star in 2016, sharing the moment with Copenhagen's Geranium as the first three-star kitchens in the Nordics. When the restaurant moved to a new Bjørvika location it lost the stars on a technicality, then won all three back in 2021 along with a Green Star. The long tasting menu — sometimes north of 20 servings — runs entirely on organic, biodynamic and foraged Norwegian produce, from a signature glazed langoustine scented with spruce smoke to porridge with reindeer heart and brown butter. Over half the guests fly in just to eat here. A deeply personal, place-rooted argument for what the far north can put on a plate.
