Chef Tim Boury cooks in a brick villa on a busy road in Roeselare, with his wife Inge Waeles running a warm, multilingual room out front — proof, as the Michelin inspectors put it, that three-star cooking doesn't have to be stiff. The food is creative French built on superb West Flemish produce, and Chef Boury is celebrated above all for his sauces and his knack for letting one great ingredient speak; the seafood courses are where he's strongest. After five years at two Michelin stars he was awarded the third in 2022, joining Belgium's very short list of three-star kitchens.
