Chef Giancarlo Perbellini first walked into 12 Apostoli as a teenager, decades ago — it's one of Italy's oldest restaurants, set in a frescoed palazzo whose history reaches back centuries. In 2023 he came full circle and took it over, moving his already two-starred Casa Perbellini into the historic rooms and giving the whole place a contemporary restyle by designer Patricia Urquiola. A year later it earned a third Michelin star. His cooking is classic at the root but never static — clear, generous, unfussy flavors he's spent a lifetime refining. There are three tasting menus plus a twelve-seat chef's table set right inside the open kitchen, the number a nod to the twelve merchants the place is named for. The kind of room where the building itself is part of the meal.
