Chef Juan Amador, German-born of Spanish descent, kicks things off with a salvo of tapas-style bites before a tasting menu of real finesse that he builds with Chef David Fleckinger. You’re properly off the grid down here (your phone will get no signal, and honestly, good), which only tightens the focus on the glass and the plate. The wine list, as you’d hope given the address, is something special.
