Gault & Millau
France's other great restaurant guide, founded in 1965 by critics Henri Gault and Christian Millau, who thought French food had gotten heavy and said so loudly. They championed the lighter, more inventive style that became nouvelle cuisine. Anonymous reviewers score restaurants out of 20 and award one to five toques, the chef's hats, judging the talent and creativity in the kitchen rather than the thickness of the carpet. Across France and much of Europe, a young chef's first toque is often the earliest reliable sign that a star is being born.
